not what you might expect, but this is a certain way to impress almost anybody.

this may seem complicated, but it’s actually extremely easy.

crème brulée (serves 5-6)

375 mL cream (or milk, but why skimp?)
3 whole eggs
80 mL sugar, plus more for topping
a few drops of vanilla (or other flavouring)

  • beat the eggs and the sugar together until they are very well-blended.
  • continue beating as you add the cream and flavouring.
  • pour the mixture into 5-6 oven-safe ramekins, and place ramekins into a bain-marie (a baking pan with about a finger of water therein).
  • cook uncovered at about 375° F until the tops just start to brown (15-20 minutes).
  • test to see if the custards have set; a sharp knife inserted into the centre of one of the custards should come out (mostly) clean. if additional time is required, reduce temperature to 300° F and continue baking, re-checking every 5 minutes.
  • once the custards have set, remove from the oven (and the bain-marie) and allow to cool for at least a few minutes.
  • when ready to serve, turn oven to broil on high. sprinkle the top of each custard with a decent (but not excessive) amount of sugar and return custards to the oven (on the top rack). broil until the sugar browns and caramelizes to form a hard crust.
  • serve warm or cold.
